Thai coconut tapioca pudding
Tapioca is a starch made from the root of the cassava plant.It is mostly found in the form of granules, flakes and powders.Naturally low in fat and high in carbohydrates, tapioca can be used to thicken sauces and soups.
It is a good source of folate and iron and is mostly found in Thai deserts such as the one shown in the picture which is made with coconut milk, sesame seeds and lotus flower.
Cassava root can be deadly if improperly cooked so it is best to buy it already prepared rather than raw.
