Grapes

Grapes are a super food filled with antioxidants, vitamin C and manganese so let go the misconception of it being the enemy of diabetics and dieters ! The portion size should be around 10 to 15 grapes.

Raisins contain more sugar so limit your intake to 1 tbsp of raisins per portion.

Skinnykc’s pizza

INGREDIENTS:

Wholewheat dough *:

1 pack yeast and 1.5 cup whole-wheat organic flour

120 ml warm water

2 tablespoons olive oil

Place the yeast in warm water for 10 min then mix all ingredients, roll the dough and let sit for 1 hour covered.

Knead the dough and form 2 disks .

PIZZA :

1kg ripe tomatoes

120 g Feta cheese

Oregano

Thyme

Basil

1 Sliced onion

Corn starch

Tomato sauce:

Place the tomatoes in warm salted water to peel the skin off.

Boil peeled tomatoes and blend until they become a paste, add salt and herbs along with 1 tbsp of corn starch previously mixed with a little water in a separate bowl.

Place disks on racks then spread tomato paste, place onion and feta on top and heat for 3 to 5 min in high temperature.

Serve hot.
