Vegan mousse

Vegan mousse ingredients:

aquafaba

coconut sugar

Aquafaba is the bean’s water ( you can collect it from an organic chickpea can )

Beat aquafaba with an electric beater for 8 to 20 minutes until you get a thick cream.

Then add sugar and beat again until you have the same consistency.

Serve your mousse with blueberries or shredded coconut.

Pain au Levain or Leavened bread

Ingrédients for levain:

Step 1: First levain (yeast)

1 cup whole wheat flour

1 cup water

Mix both ingredients and keep covered with a towel for 3 to 5 days.

Step 2: 2nd levain

On the 5 th day,mix 1/2 cup flour and 1/2 cup water.

Leave covered for 2 days.

You will be able to see bubbles forming on top which means that your levain is forming properly.

Step 3: feeding your yeast

Wait 2 more days and mix 1/2 cup of flour with 1/2 cup of water ,cover for 24 hours.

Step 4: last levain (for bread use)

Mix 1/2 cup of the last levain with 1 cup of flour and 1 cup of water.(Leave covered for 3 days).

Discard the rest of levain.

Step 5: Dough formation

Mix 1/2 cup of the latest levain with 3 cups of flour and 2 cups of water with 1 tsp salt.

Keep the rest of your levain refrigerated for later use.

kneed dough for 5 minutes than keep covered for 6 hours. Shape dough into bread and let sit for 3 more hours adding oil and flour to prevent it from sticking.

Preheat oven at 270 C and place bread for 45 minutes to 1 hour depending on bread size. Place a cup of water to have a golden crust .Decrease temperature every 10 minutes to reach 200 C.

Homemade chia ,dates and almond pudding

Ingredients:

1 cup almonds (without skin) soaked in water overnight.

2 cups water

2 tbsps honey

2 tbsps chia seeds per cup of pudding

1/3 cup dates

Blend almonds,dates with honey and water. Strain mixture with a coffee filter.

Place vegetable milk in small cups and add 2 tbsps chia seeds.

Place in fridge overnight and have it for breakfast or snack.

Chia seeds are rich in fiber,good fats and proteins.

You can also use your homemade almond milk for coffee and smoothies.

whole wheat organic Cinnamon rolls


Ingredients:

For the paste:

2 cups organic whole wheat flour

2 tbsp brown sugars

3 tsps baking soda

1/2 tsp himalayan salt

1 cup organic milk

1/4 cup organic butter

For the filling:

1/3 cup organic melted butter

1/2 cup brown sugar

1/3 cup honey

3 tsps grounded cinnamon

Mix flour,salt,sugar,baking soda,butter and pour the milk. Kneed the dough for 5 minutes.

Mix melted butter,honey,cinnamon and sugar.

Kneed the dough into a long rectangle and place filling on top. Roll the dough and cut equal parts of 8 slices.

Place in baking sheets with a bit of the cinnamon mixture at the bottom of each roll.

Bake for 25 minutes at 200 C and enjoy!
