Sweet potato benefits

Sweet potato is a power food it contains all the vitamin A that you need for the whole day.

Its orange color comes from betacarotene which is a precursor of vitamin A.

The antioxidants in sweet potatoes  helps ward off cancer cells and protects against aging.

Their natural sugar are slowly released to the bloodstream which makes it a low glycemic index food.

They are a good source of potassium which regulates heart beat and nerve signal and also contain magnesium a powerful muscle relaxant.

Roasted, pureed or grilled they are a healthier substitute to sweet potatoes.

French toast at sum of us Dubai

French toast reminds me of the Pain perdu French recipe which originated from old baguettes that were hard enough for consumption and were dipped in milk and fried for softening and it ended up one of the best deserts on French menus.

That particular French toast has bananas, mascarpone, nuts and caramel sauce , i would rate it as super heavy and more like a desert . I am not a fan of heavy meals in the morning as the stomach is still not ready for such a shock.

I would recommend it for share by 2 to 3 people to avoid feeling stuffed.

Pecan chocolate tart at Armani Caffe Dubai

Armani caffe Dubai is my favorite spot on Saturdays as i get to chose a different desert every time. The presentation and texture of pastries always pleases my taste buds ,you can’t go wrong with their desert menu.

This time i chose the pecan chocolate tart as it contains my favorite 2 ingredients , the nutty flavor and the deep chocolate taste makes that desert heavenly good.

Espresso at Baccarat hotel New York

I found the presentation of a simple espresso amazing at the Baccarat hotel as i happened to be there  on vacation.

This nice crystal glass served with a mini desert made my day!

However the mignardises that i ordered as an afternoon desert were not up to my expectation as the chocolates where nice from the outside but had creamy filings that i did not find tasty i would have preferred plain dark chocolate bites along with macarons.

Kale benefits

Kale was not part of our diet 10 years ago but it squeezed into our eating habits very quickly due to its health benefits.

A single cup of Kale has Vitamin A,K,C,B6,manganese,copper,potassium magnesium,vitamin B1,B2,B3 ,iron and phosphorus!It contains very little fat and it is considered among the most nutrient dense food. Persimmon snack

If you run out of idea and craving hits you ,combine healthy ingredients you find around you. I found some persimmon and nuts and did this heart healthy desert/snack by combining persimmons, nuts and coco chips.

Persimmons are packed with health promoting nutrients such as vitamins,minerals,and antioxidants. Vitamins C ,B ,folate coupled with potassium, manganese will enhance metabolic enzymatic chemical reactions in your body.

Be creative,recipes prepared on the go turn out often to be the best!

Occasional croissant in Dubai

I f you are planning to play it the French way, Sum of us is a place i recommend for plain croissants. They resemble the most the French version because it is hard to find a real croissant in Dubai as they  all taste more like english muffins. Croissant is considered filling so plan to share it or to have a late lunch if you eat it alone. I don t recommend it as part of a healthy routine however an occasional treat won’t harm you. If you are on a low fat diet avoid it as it is high in saturated fats and calories.

KC’s chicken curry

Ingredients:

 500 g Chicken

1 potato

1 carrot

½ zuchini

3/4 cup coconut milk

1 onion

curry powder

fresh ginger slices

white pepper

whole wheat rice

 

Slice the onion and ginger then heat it with 1-teaspoon canola oil

Cut the chicken to pieces and add it to the pan

Add sliced carrots and potatoes with ½ cup of water

Add the spices and let simmer

Add ¾ cup coconut milk at the end and let boil for 2 minutes.

Serve with boiled whole wheat rice and enjoy!
