Lentil salad

Ingredients:

Boiled lentils

Shredded carrots

Walnuts

Balsamic vinegar

Baby spinach

Cucumbers

Tomatoes

Olive oil

Coarse salt

Soak lentils overnight and boil.

Add shredded carrots and baby spinach.

Cut cucumbers and tomatoes in cubes.

Mix all ingredients and put walnuts on top.

Dressing:olive oil,balsamic vinegar and salt.

My easy vegan salad

As I reached home around 11 h pm, I wanted to prepare a quick light diner before going to bed. As I always keep boiled and cleaned veggies in the fridge,it was easy for me to prepare that salad by mixing avocados,almonds,beetroots,cucumbers and spinach leaves with olive oil and lemon juice.

This salad is vegan as it does not contain any animal products ,you can also prepare it for lunch with a whole wheat sandwich and a fruit.
